In a medium-sized bowl, pour in the coconut milk and add the chia seeds, honey (or maple syrup), and vanilla extract. Whisk together until all the ingredients are well combined and the chia seeds are evenly dispersed throughout the mixture.
Once mixed, cover the bowl with plastic wrap or a lid and place it in the refrigerator. Let it chill for at least 4 hours, or ideally overnight, to allow the chia seeds to absorb the coconut milk and create a creamy, pudding-like texture.
After the chia pudding has thickened, take it out of the fridge and prepare your serving glasses. Begin layering by spooning a layer of the chia pudding into the bottom of each glass. Aim for about ¼ of the glass to be filled.
Next, add a generous layer of mixed berries on top of the chia pudding. Ensure you vary the types of berries for a colorful and visually appealing presentation.
On top of the berries, sprinkle a layer of granola. This will provide a delightful crunch that complements the creamy pudding and juicy berries.
Repeat the layering process, starting with another layer of chia pudding, then more berries, and a final sprinkling of granola until the glasses are filled to your desired height, finishing off with a vibrant layer of mixed berries.
To add a finishing touch, sprinkle shredded coconut over the top layer of berries, enhancing both flavor and appearance.
For a pop of color and freshness, garnish the parfaits with fresh mint leaves if desired. This will not only brighten the dish but also elevate its aesthetic appeal.
Notes
Serve in clear glasses to showcase the layers. Drizzle with honey for extra sweetness if desired.
