Instructions
Start by preheating your oven to 425°F (220°C).
In a large mixing bowl, add the cauliflower florets. Pour in the olive oil, then add the minced garlic, smoked paprika, sea salt, and black pepper. Toss everything together until the cauliflower is well coated.
Line a large baking sheet with parchment paper. Spread the seasoned cauliflower evenly across the sheet.
Place the baking sheet in the preheated oven and roast the cauliflower for approximately 20 minutes.
Carefully remove the baking sheet from the oven. Sprinkle the grated Parmesan cheese generously over the cauliflower.
Return the baking sheet to the oven and roast for an additional 5-10 minutes until the cheese is fully melted.
When done, take the baking sheet out of the oven and immediately zest the lemon over the warm cauliflower.
Finish by garnishing with the chopped fresh parsley before serving.
Notes
Serve directly from the baking sheet for a rustic look, or transfer to a shallow serving dish.
