With clean hands, divide the mixture into equal portions and shape each into patties, each approximately 2 inches in diameter and ½ inch thick. The mixture should yield about 8 patties.
Heat 2 tablespoons of olive oil in a non-stick skillet over medium heat. Once the oil shimmers, carefully place the patties in the skillet, ensuring you do not overcrowd the pan to allow for even cooking.
Cook the patties for about 4-5 minutes on each side, or until they achieve a beautiful golden brown color and a crispy exterior. If preparing a second batch, add the remaining tablespoon of oil as needed to prevent sticking.
